I was born in Brooklyn, New York in a large and loving Italian family. I learned how to cook before I was 12. My father always said, “It doesn’t matter, what you cook, how it looks, what it tastes like, as you as you cook it with love, it will be delicious” It was the credo we lived by, all holidays, celebrations, even funerals revolved around food. At 13, I could prepare a dinner for thirty people like it was nothing. After cooking for my husband, four children, and numerous friends, I realized that cooking is truly my niche

Summer Style Chicken

Excellent! I had to make a few changes to fit what I had on hand but it came out great all the same. I used only zucchini and a can of crushed tomatoes and added some oregano for flavor. Basically it tastes somewhat like a cross between chicken parm & cacciatore. Good & simple to make, everyone enjoyed it. This one's a keeper!

This is an excellent recipe. I took the advice of one reviewer and added ginger. I also omitted the garlic salt. I will definitely make this again.
