1 (3 pound) broiler-fryer chicken, cut up
1 pound red potatoes, cut into chunks
1/2 cup prepared Italian dressing
1 tablespoon Italian seasoning
1/2 cup grated Parmesan cheese

DIRECTIONS
Place chicken in a greased 13-in. x 9-in. x 2-in. baking dish. Arrange potatoes around chicken. Drizzle with dressing; sprinkle with Italian seasoning and Parmesan cheese. Cover and bake at 400 degrees F for 20 minutes. Uncover; bake 20-30 minutes longer or until potatoes are tender and chicken juices run clear.

The flavor of this dish was very good, my family loved it. And It was so easy to make!I had to leave it in 20 minutes longer than the recipe said to completely cook the potatoes. A winner!

I needed a quick and easy dinner with what I had on hand and this fit the bill perfectly. Not a gourmet meal, but total comfort food and so easy to prepare. Thanks for a great dish!

Perfect recipe in a pinch! I was looking for something that would let me put off grocery shopping one more day, and found this recipe. Changes: I used skinless, boneless chicken breasts and baking potatoes because I did not have red. I used the recipe from this site for Italian Dressing Mix to make the dressing. I also used the recipe Italian Seasoning II for the seasonings. Very yummy and easy to make.

This was good but I diced the potatoes and they still took over an hour to cook through. Maybe next time if I add some more liquid, such as chicken broth they will cook more quickly? Any ideas?

The flavor in this was out of sight, and I didn't even use the italian seasoning, just a little garlic and onion powder. A fantastic dish, but like several other reviewers, my potatoes were cut too large (my fault) and didn't all totally cook through. Next time: smaller slices, for there will be a next time! Yum! Update....I microwaved the potatoes as some of you had suggested and it was fantastic. My husband finished the pan!

Super easy and really tasty. DH was shocked at the how easy it was. I also had a little trouble with the potatoes. I used baby potatoes cut in half, and the bigger ones weren't cooked enough. You must cut them much smaller or microwave them a few minutes before baking.

This had a really nice flavor, and was very easy to make. However, I found (as others have) that the chicken seemed to be done before the potatoes, so I was left with the option of having overbaked chicken or underbaked potatoes. Next time I'll cut the potatoes in smaller pieces and see if that helps.

I LOVE this recipe! Got it from the Quick Cooking cookbook (by Taste of Home). I use chicken breasts instead and it turns out marvelous!
