1 3/4 cups uncooked instant rice
6 boneless, skinless chicken breast halves
garlic salt and pepper to taste
1 (14.5 ounce) can chicken broth
1 cup picante sauce
1 (8 ounce) can tomato sauce
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Cheddar cheese

DIRECTIONS
Spread the rice in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle both sides of chicken with garlic salt and pepper; place over rice. In a bowl, combine the broth, picante sauce, tomato sauce, onion and green pepper; pour over the chicken.
Cover and bake at 350 degrees F for 55 minutes or until rice is tender and chicken juices run clear. Sprinkle with cheeses. Bake, uncovered, 5 minutes longer or until cheese is melted.

This dish is fairly easy but didn't taste anywhere near authentic. It tasted better as leftovers.

I had to alter the recipe due to what we had on hand in the kitchen and it turned out excellent. I used: rice, chicken breasts, fresh garlic minced, salt, pepper, paprika, 1 can of beef broth, 18oz jar of tomato sauce, 2 tbsp English hot mustard, 1 red pepper, 1 onion, 3 green onions, 1 can sliced mushrooms, 1 cup mexican blend shredded cheese. I baked it as followed. Plated it with shredded lettuce, ranch and salsa and it was so good!! I would make it again.

I made this for dinner tonight and followed the recipe exactly. It was very good and the chicken was tender and moist. There was only a small amount of rice left over. Will definitely use this recipe again!

This was easy, but it really lacked any flavor. I didn't have picante sauce so I used salsa. If you use salsa you may want to cut the onion as there was a lot of onion with both 1/2 cup and the onions in the salsa. I would also up the salt/spice content as this was bland with the rice. I didn't have instant rice just regular and it worked fine. I also added some capers to the mix. It was a snap to put together, but no one was that big on it. Thanks-
