Nice and spicy use for leftover turkey in a form that even the children will enjoy. Quick, too! Great topped with black olives, green onions, and tomatoes! Leftover ham would also be excellent in this dish.

My Pennsylvania Dutch grandmother, Florence Walter, used to make these. They are especially great for picnics. The combination of pickled eggs, beets, and onions is really something special. A great way to use up left-over Easter-eggs too!

Stir up a magnificent risotto using leftover lamb, onions and artichoke hearts. Use only genuine Italian Arborio rice, available in the specialty section of most grocery stores. The finished dish should be slightly soupy so that it can pour from the pot.

Here's an amusing approach to sweet and sour sauce! Cook orange jelly beans with chicken broth, vinegar, honey, pepper flakes, garlic and fresh ginger root. Serve over sauteed chicken and top with almonds, green onion and cilantro.

This is a very loved recipe from my Italian heritage and childhood. Have a nice Italian loaf or french baguette on hand to soak up the delicious sauce. It's a great way to use any leftover eggs from Easter.

This is the traditional recipe made in Greek kitchens. The basic Avgolemono (broth and lemon) can be varied for other similar Greek recipes. Serve with bread. Bread bits can be dipped into the soup. The soup will last in the fridge for a number of days or can be frozen. To reheat, place in microwave or heat on the stove.

Tropical Tiramisu

Try this tempting tiramisu with a tropical twist. Drizzle morsels of cake with mango nectar and rum, then layer with a fabulous pineapple and honey cream cheese, candied ginger and macadamia nuts. Chill and serve with slices of mango and pineapple.
