We have a 2-1/2-acre avocado grove. It's located on a high slope just north of town. In the distance, we see foothills covered with avocado and citrus groves. Those two crops make a great combination in this salad. Friends always request it.

A spur-of-the-moment creation when I wanted something with a great flavor punch and lots of color, plus quick to prepare---this one fills the bill, with baby spinach and colorful cranberries and mandarin oranges, plus the crunch of sweetened almonds and the pungent feta cheese---a new favorite at our house! You may substitute blue cheese for the feta and any kind of sweetened pecans or walnuts, if desired, for the almonds.

Bite-size balls of fresh mozzarella, known as bocconcini make up this great salad. If possible, seek out mozzarella di bufala, made from water buffalo's milk; a specialty of central and southern Italy, it is a softer, creamier mozzarella than that made from cow's milk.

Denise Salad Number One

Spicy arugula is tossed with succulent mandarin orange segments, tangy goat's cheese, crunchy sunflower seeds and sweet yellow bell peppers in this elegant and flavorful salad. You can substitute blue cheese for the goat's cheese, if you wish. I usually like to top this with a simple vinaigrette of fresh basil, apple cider vinegar and olive oil.
