"You could face anything after this hearty breakfast of eggs, mushrooms and tomatoes fried with bacon and butter. Slices of Irish soda bread are grilled in the skillet and served on the side."

6 thick slices bacon
2 tablespoons butter or margarine
4 eggs
2 small tomatoes, sliced
2 cups whole mushrooms
4 slices prepared soda bread

DIRECTIONS
Lay the bacon slices in a single layer in a large skillet. Fry over medium heat until it begins to get tinged with brown. Fry on both sides. Remove from pan, but save grease.
Melt butter in skillet. Crack eggs into pan, being careful not to break yolks. Place tomato slices, mushrooms, and bread in pan. Fry gently, stirring mushrooms and tomatoes occasionally. Keep everything separate. Turn bread over to brown on both sides.
When egg whites are set, but yolks are still runny, dish half of everything onto each of 2 warmed plates, and serve immediately.

Very authetic and quite similar to breakfast I once had in an Irish bed n'breakfast. Since I could not find back or Irish bacon as it is sometimes called, I used meaty slices of ham. To help keep the eggs whole and seperate, I fried the tomatoes and mushrooms in a seperate frying pan to make things easier. I garnished the plates with shredded good-quality Irish cheddar.

This was good but in order to have an authentic Irish breakfast, you have to add black and white pudding to the plate. There are a couple of different kinds available in the US and if you want Irish food, it is well worth the effort to find some! Most breakfasts also have eggs either fried or overeasy. As a variation,this was good though.

not bad but add some sausage,potatoe bread,baked beans,white or blood pudding,fried bread(crustless white bread fried until golden,ketchup or brown sauce(similar to steak sauce) and a steaming mug of tea and that's a good irish fry

For a truely authentic experience you'd need to find some black or white pudding, and for a truely magnificent hangover cure add baked beans and lashings of tea and toast.

What an awesome meal. My husband & I had it for dinner and we love it. It's unique in that it includes veggies, which American breakfasts almost never do. Quick & easy too!
